Das Verfahren ist anwendbar auf freie und veresterte Sterine in tierischen und pflanzlichen Fetten und \u00d6len, fetthaltigen Lebensmitteln und verwandten Erzeugnissen. Die Bestimmung gilt f\u00fcr Probenmengen von 1 g bis 2 g Fett. Das Verfahren ist nicht auf dunkel gef\u00e4rbte Fette und \u00d6le anwendbar. Das Enzym ist nicht spezifisch f\u00fcr Cholesterin, sondern es werden auch andere 3 Hydroxysterine oxidiert. Das Verfahren wurde nicht an Produkten gepr\u00fcft, die mit h\u00f6heren Konzentrationen von Sterinen angereichert waren.
